Chicken Tikka Masala

coriander seeds1 tbsp

cumin seeds1/2 tsp

fresno chilies1-2

garam masala1 tbsp

garlic7 cloves
-
ginger1 2inch piece
-
heavy cream1.25 c

kosher salt2 tsp

oil2 tbsp

onion1 large
-
paprika1 tbsp
-
tikka paste2 tbsp

tomatoes1 28 oz can
-
turmeric1 tsp
-
water4 tbsp

yogurt1 c
🍳 Cookware
- saute pan
-
1Toast coriander seeds and cumin seeds .coriander seeds: 1 tbsp, cumin seeds: 1/2 tsp

2Wait until cool then blend.

3Add remaining paste ingredients ( garam masala , turmeric , garlic , ginger , fresno chilies , and water ) and blend until smooth.garam masala: 1 tbsp, turmeric: 1 tsp, garlic: 7 cloves, ginger: 1 2inch piece, fresno chilies: 1-2, water: 4 tbsp

4Add oil while blending until very smooth.oil: 2 tbsp

5Toss cut chicken with marinade ingredients ( yogurt , tikka paste , and kosher salt ).chicken: 2 lbs, yogurt: 1 c, tikka paste: 2 tbsp, kosher salt: 2 tsp

6Marinate for ⏱️ 20 min to overnight.

7In saute pan , sear chicken over medium-high heat until well browned.

8Reduce heat to medium and add butter and onion .butter: 4 tbsp, onion: 1 large

9Cook until translucent.

10Add remaining paste and paprika .paprika: 1 tbsp

11Add tomatoes and let simmer for ⏱️ 10 min .tomatoes: 1 28 oz can

12Add heavy cream and bring back to simmer.heavy cream: 1.25 c

13Add chicken and simmer for ⏱️ 10-15 min until chicken cooked through and sauce is thickened.

14Serve with rice and garnish with cilantro.
