Chicken Tikka Masala

🥘 Ingredients

  • butter
    4 tbsp
  • chicken
    2 lbs
  • coriander seeds
    1 tbsp
  • cumin seeds
    1/2 tsp
  • fresno chilies
    1-2
  • garam masala
    1 tbsp
  • garlic
    7 cloves
  • ginger
    1 2inch piece
  • heavy cream
    1.25 c
  • kosher salt
    2 tsp
  • oil
    2 tbsp
  • onion
    1 large
  • paprika
    1 tbsp
  • tikka paste
    2 tbsp
  • tomatoes
    1 28 oz can
  • turmeric
    1 tsp
  • water
    4 tbsp
  • yogurt
    1 c

🍳 Cookware

  • saute pan

    Toast coriander seeds and cumin seeds .
    coriander seeds: 1 tbsp, cumin seeds: 1/2 tsp

    Wait until cool then blend.

    Add remaining paste ingredients ( garam masala , turmeric , garlic , ginger , fresno chilies , and water ) and blend until smooth.
    garam masala: 1 tbsp, turmeric: 1 tsp, garlic: 7 cloves, ginger: 1 2inch piece, fresno chilies: 1-2, water: 4 tbsp

    Add oil while blending until very smooth.
    oil: 2 tbsp

    Toss cut chicken with marinade ingredients ( yogurt , tikka paste , and kosher salt ).
    chicken: 2 lbs, yogurt: 1 c, tikka paste: 2 tbsp, kosher salt: 2 tsp

    Marinate for ⏱️ 20 min to overnight.

    In saute pan , sear chicken over medium-high heat until well browned.

    Reduce heat to medium and add butter and onion .
    butter: 4 tbsp, onion: 1 large

    Cook until translucent.

    Add remaining paste and paprika .
    paprika: 1 tbsp

    Add tomatoes and let simmer for ⏱️ 10 min .
    tomatoes: 1 28 oz can

    Add heavy cream and bring back to simmer.

    Add chicken and simmer for ⏱️ 10-15 min until chicken cooked through and sauce is thickened.

    Serve with rice and garnish with cilantro.
